The fundamental rule is always to use the best available ingredients.

Cold cuts (ham, salami, pancetta, finocchiona, Colonnata lard etc) all come directly from my beloved Tuscany. We only use pasta Gragnano, undoubtedly the best dry pasta produced in Italy and everyday we prepare fresh hand made pasta such as tortelli, gnocchi, tagliatelle and pici.

All vegetables, fundamental ingredients of our dishes, are always fresh and of the highest quality.







And then the meat..., like everyone from Tuscany, I love it and have a soft spot for it, but we also offer daily fish dishes. Our menu changes partially every week.

Finally, in addition to our daily dessert we always offer the classic “bomba al cioccolato”, hand made ice-cream and affogato.
